1lb. shredded chicken, cooked
1 (15 oz.) can diced tomatoes
1 (10 Oz) can of enchilada sauce
1 med. onion, chopped
1 (4oz) can of chopped green chili peppers... See More
2 cloves of garlic, minced
2 c. water
1 (14 oz) can of chicken broth
1 tsp. cumin
1 tsp. chili powder
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
1 (10oz.) package of frozen corn
1 tbs. chopped cilantro
Dump in crockpot... cook for 6-8 hours on Low. or high for 3-4 hours.
Top with tortilla strips or chips, cheese, sourcream. whatever you like really.
